Patatas a lo Pobre which in English means poor man’s potatoes is one of the most popular Spanish lunch dishes.
Ingredients
- 1kg potatoes
- 1 onion
- 2 green or red peppers (optional)
- Salt
- Extra virgin olive oil
- 1 garlic clove
- Optional: chorizo
Method
- The first step is very easy and fast! You just have to peel the potatoes and cut it into round slices. Make sure that your potato slices aren’t too thin because that way they’ll fall apart. Also carefully cut the onions and peppers on julienne style (thin and long).
- Pour the olive oil on a large frying pan and in the meantime put some salt on the potatoes. Once that you salted the potatoes, place them on the frying pan with the cold oil. It is important that the oil it’s cold at the beginning because this way they will get the characteristic “confit” texture.
- Cook the potatoes on a low heat for 15 minutes, add the pepper and onion slices and cook all of them together for 10 more minutes on medium heat.
- After that, remove the oil and let the vegetables on the dry pan to toast (you can also use a new pan). While toasting them put the garlic and a little bit of salt.
- Serve them on a large plate or in individual bowls as a garnish.
