This dish was created during the Middle Age in Southern Spain, and it was eaten at dawn because it gave people enough energy to go through the cold winter days.
Ingredients
- 400g bread
- 7 garlic cloves
- 2 Lts chicken stock (can be a vegan alternative)
- 4 eggs
- 1 teaspoon paprika
- 6 tablespoons olive oil
- 250g ham (optional)
- 1 teaspoon salt
Method
- The first thing you need to do is peel every single garlic clove and chop it into small pieces. Also, grab the bread and cut it into small or medium size cubes.
- Start heating olive oil in a large pot, add garlic, and cook it at low heat for 2 minutes or until they get a golden tone.
- Add the bread cubes and toast it for 3 minutes or until golden brown. Make sure to shake the pot once in a while so they get an even color. This way the bread will absorb the olive oil and garlic flavors.
- After that, add the ham. You can either put the whole slices or chop it into small pieces, both ways are fine. Let it cook for 3 minutes.
- Now is time to pour the chicken stock, paprika, and salt into the pot. Make sure that the spices get dissolved by mixing the soup just a little bit.
- Cook it for 20 minutes at medium heat.
- When 10 minutes of the cooking time went by, crack the eggs and keep cooking until they set, for about 10 more minutes.
- Serve warm and enjoy!
